    It is really hard to write this menu because I am suffering from acute tonsillitis that makes swallowing food and drink painful. Hopefully the antibiotics prescribed by my doctor will start working soon and allow me to enjoy this week’s meals.

    Monday – spaghetti with homemade meatballs, salad

    Tuesday – toad in the hole with homemade sausage, peas

    Wednesday – cornbread crust veggie pot pie

    Thursday – homemade pizza

    Friday – fish, quinoa, green beans

    Saturday – dinner with Ohio 4-H International County Coordinator Team

    Sunday – hosting Alex’s parents – french onion soup with swiss cheese croutons, cranberry sauce

      Curious about toad in the hole I’ve never heard of it. Thanks for your comment at the Land of B, we’re psyched to start charcuterie. Glad to know someone else who has done it, we’re kind of nervous about hanging raw meat in our basement. I’ve been debating with myself to roll the pancetta or do it flat, tesa style. Flat seems safer and easier for a beginner but rolled seems more authentic. I’m only concerned since we’re new at it and I hate to waste it if it went bad.

      Toad in the hole is sausages baked in a popover batter. I’ve never made it but it sounds delicious.

      We always hang pancetta flat because it’s easier and safer.

      Yum! I think we will hang it flat also, thanks for the affirmation on that. Do you just use the basement or a modified fridge or something. Not sure how to ensure proper humidity but the temp in our basement should be good.
