• Popcorn Cauliflower

    roasted popcorn cauliflowerI was recently approached to contribute some recipes to an ipad application (details to come). When I started to look through my archives, I realized there were so many simple delicious dishes I make on a regular basis that are not on this blog. I am going to begin to remedy that today, with a recipe for popcorn cauliflower.

    This is a recipe that will convert crucifer haters like one of my sisters. Not only does she eat cauliflower cooked in this manner, but enjoys it enough to contribute popcorn cauliflower to family dinners!

    All you do to make popcorn cauliflower is wash and chop fresh cauliflower into bite sized pieces. Drizzle some olive oil over the top. Tasty olive oil, like the single origin Greek oil I just bought from Columbus importer The Olive Orchard, makes the cauliflower shine. Generously top with salt and pepper.

    Roast in a hot oven, stirring occasionally, until the edges are well browned.

    The browned bits are my favorite because they really do have a popcorn-like taste. I make this recipe often to give my family the cancer fighting nutritional benefits of cauliflower in a delicious bite.

    Makes four side dish servings

    1/2 head fresh cauliflower

    2 teaspoons olive oil

    1/2 teaspoon salt

    1/2 teaspoon ground black pepper

    1. Wash and chop fresh cauliflower into bite sized pieces. Place on a cookie sheet.

    2. Drizzle olive oil over the top.

    3. Sprinkle with salt and pepper.

    4. Roast in a 350 degree F oven, stirring occasionally, until the edges are well browned, 15-20 minutes.

    5. Serve hot.

      I had cauliflower for the first time in several years (horrifying for a gal who loves veggies) a bit back, and I forgot how wonderful it is. I think I’ll get some and use your recipe for dinner this week! Yummy!

      Roasted cauliflower is my very favorite! I love it and it has such a great flavor that you cannot get cooking it any other way (well maybe grilled?). Yum!

      Hi! My family doesn’t like cauliflower, but they might eat this. What kind of texture does it have? Crispy or crunchy like raw caulitflower or soft?

        The cauliflower cooks through so it is soft on the inside but crispy because of the roasting. I’d love for you to try this recipe and report back about whether your family eats it.

      Quick, easy and nutritious – a winner all around. I love roasted cauliflower – I think calling it “popcorn cauliflower” will make it more appealing to my kids! Thanks for sharing this with the Hearth and Soul hop!

      This is soo soo good.I am stunned by this wonderful, almost fat free and yum snack idea.I love the “popcorn” way of calling it!Would love to try this coz my husband loves cauliflower!

      I love roasted cauliflower – my favorite modification to this method is adding a bit of ground cumin!

      I do this all the time too! ‘Cept I frequently squeeze a lemon over top before roasting. Yum!

      I would eat this in a heartbeat — and I think my kids would, too! After reading Claire’s comment, I’ll be curious to try it with a flavored olive oil. Lemon sounds great. Or maybe Thyme Olive Oil, perhaps with a dash of the Hot Red Pepper. Thanks Rachel! Love healthful recipes like this one that are simple to remember and throw together quickly.
