Someone asked me how well I follow through with the plan. Last week, I made Monday and Tuesdays meals as planned, cooked up faux Reuben sandwich and tomato soup instead of dinner with Dad on Wednesday, and made homemade macaroni and cheese on Thursday instead of lentil barley soup. None of the changes required a trip to the grocery!

On to this week:
Monday – Corn chowder and salad with sprouts
Tuesday – Tandoori chicken, palak paneer (homemade paneer), and rice
Wednesday – leftovers or dinner with Dad
Thursday – barley lentil soup, homemade sausage
Friday – spinach lasagna
I’m making an additional lasagna to deliver to a friends in a tragic situation. The father is terminally ill and mother is five weeks from delivering their third child. Love your plan this week! Tandoori chicken – yummo! One of the great things about menu planning is that you rule the plan, it doesn’t rule you. You can switch it up as life dictates and still be successful at it. I am sorry to hear about your friends. May they feel loved and cared for during this difficult time by friends like you.
