I use a sharp knife and cut each piece individually into strips and then go across all the strips into a dice. You could snip with kitchen scissors which would probably be easier.

Very serious question here, as I’ve tried, and failed in the past.
How the heck do you chop candied ginger?
That stuff is like gummy bears mixed with superglue. It sticks to the knife, the cutting board, and itself. Plus it’s bouncy and stiff and generally resists in all ways being chopped.
Other than chopping the ginger, I’m looking forward to making this. Our holiday supply (a different recipe) is about to run out.

This post had me cracking up! I once made the BEST veggie lasagna ever…and my evil food hound dog ate it..then a shoe landed in it, but that is another story.

The fruitcake sounds good, and I am going to tuck this recipe away in my files for next year when I hopefully have time to make a fruitcake, instead of just being one.
